Chicken & Wild Rice Soup

Ingredients

  • 6 c. water
  • 1 (6-oz.) pkg. long grain and wild rice mix
  • 1 (2-oz.) pkg. chicken noodle soup mix
  • 2 stalks celery, sliced
  • 1 carrot, peeled and chopped
  • 1/2 c. onion, chopped
  • 2 (10-3/4 oz.) cans cream of chicken soup
  • 2 c. deli roast chicken, chopped
  • salt and pepper to taste

Preparation

Step 1

Bring water to a boil in a large stockpot over medium-high heat. Stir in rice mix with seasoning packet and noodle soup mix. Bring to a boil. Cover and simmer over medium-low heat for 10 minutes, stirring occasionally. Add celery, carrot and onion. Cover and simmer for 10 minutes, stirring occasionally. Mix in soup, chicken, salt and pepper. Cover and simmer 10 minutes more, stirring occasionally, until rice and vegetables are tender.

Serves 6.
