Quinoa Salad

Ingredients

  • 1 C. Quinoa
  • 2 Tbsp. Rice Vinegar
  • 1 tsp. Honey
  • 1/2 tsp. Chili Flakes
  • 6 Tbsp. Olive Oil
  • 2 Green Onions
  • 1 C. Seedless Orange Segments
  • Salt & Pepper To Taste

Preparation

Step 1

Rinse quinoa in a sieve under cool water till water runs clear. Add quinoa & 2 C. water to a pot, bring to a boil, reduce to a simmer & cook till tender, about 15 min. In a lg. bowl, whisk together vinegar, honey & chili flakes. Whisk in olive oil till combined. Add warm quinoa, green onions, orange segments & salt & pepper to taste. Serve warm.
