Ingredients

  • 1 c. raisins, soaked and drained
  • 1 3/4 cup sugar
  • 3 eggs
  • 1 1/2 cups oil
  • 1 4/5 cups flour
  • 2 t. baking soda
  • 1 t. salt
  • 1 t. cinnamon
  • 1/2 c. chopped nuts
  • 1 1/2 c. finely chopped apple
  • 3 c. shredded carrots

Preparation

Step 1

Mix sugar, eggs and oil. Add flour w/ b. soda, salt and cinnamon. Stir in raisins, nuts, apple and carrots.

Grease 2 9" round pans. Bake at 350° 50-55 min.
Or if using 9x13 pan bake 45 min.
