BROCCOLI, RED PEPPER AND CHEDDAR CHOWDER
Got this recipe when I took a class of Stews and Soups from Evolution Catering.

Ingredients
- 1 small head broccoli
- 1 large potato, chopped small
- 1 large onion - chopped small
- 1 red bell pepper, cut into small pieces
- 1 large clove garlic, chopped
- 2 tbsp butter
- 1 tsp ground cumin
- 1 tsp salt
- 1/4 tsp pepper
- 2 tbsp flour
- 3 cups chicken or vegetable stock
- 3/4 cup heavy cream
- 1 1/2 cups shredded cheddar
Preparation
Step 1
Peel potato and chop in small pieces. Cook potatoe, onion, pepper, garlic and pepper in butter. Cook till softened, about 8 minutes.
Add cumin, salt and pepper and cook, stirring - 1 minute. Add flour and cook 2 minutes.
Add stock, broccoli and simmer partially covered for about 10 minutes till potato is tender. Stir in cream and cheese and season with salt and pepper.
If smoother texture is wanted, puree about 2 cups of chowder in blender until smooth.
