Blueberry Buckle Coffee Cake

Ingredients

  • CAKE:
  • 1/4 cup margarine
  • 3/4 cup sugar
  • 1 egg
  • 2 cups all purpose flour
  • 2 1/2 tsp. baking powder
  • 2/4 tsp. salt
  • 3/4 cup parve milk
  • 2 cups fresh or frozen blueberries
  • TOPPING:
  • 1/2 cup sugar
  • 1/3 cup all purpose flour
  • 1/2 tsp. cinnamon
  • 1/4 cup margarine,softened
  • GLAZE:
  • 1/2 cup confectioners sugar
  • 1/4 tsp. vanilla
  • 1 1/2 tsp. hot water
  • whip

Preparation

Step 1

1. Preheat oven to 375 degrees. Grease a 8 inch spring- form pan.
2. Beat margarine at medium speed till fluffy, gradually add sugar beating well. Beat in egg.
3. Combine 2 cups flour,baking powder and salt,add to margarine mixture alternating with milk, beginning and ending with flour mixture.Add blueberries.
4. Pour batter into prepared pan.
5. Combine sugar,flour and cinnamon, cut in margarine until crumbly;sprinkle on batter.
7. Bake for 42-45 minutes. Run a knife along edge of pan and remove sides.
8. Allow to cool, then drizzle on glaze.
9.Serve with whipped cream.
