SPANISH RICE (WITH SAUSAGE)

Ingredients

  • 2 tsp olive oil
  • 1 medium onion, finely diced
  • 1 garlic clove, minced
  • 1 cup long grain rice
  • 1 tbsp tomato paste
  • 1 tsp paprika
  • 2 cups chicken broth
  • 1/2 of 250 gm garlic sausage, thinly sliced
  • 1 red pepper, sliced into thin strips
  • 1 yellow pepper, sliced into thin strips
  • 1/2 cup pitted green olives

Preparation

Step 1

Heat a large saucepan over medium. Add oil, then onion and garlic. Cook until onion is soft, about 3 minutes. Add rice, tomato paste and paprika. Stir until rice is coated. Add chicken broth, sausage and peppers, then bring mixture to a boil, stirring often. Reduce heat to medium-low. Cover and simmer until liquid is absorbed, 25 minutes. Serve with pitted green olives on top.
