  • 2 1/4 cups of cake flour
  • 1 1/4 cups of sugar
  • 1 1/2 cups well mashed ripe banana's (3 to 4)
  • 1/2 cup of shortening
  • 2 eggs
  • 2 1/2 teaspoons double cacting baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • banana slices for garnish
  • ingredients for frosting
  • 2 cups of heavy or whipping cream
  • 1/4 cup of confectioners sugar
  • 1/8 teaspoon salt
  • 1 teaspoon vanilla extract

Directions for cake

1. Preheat oven to 375F. Prepare two 8-inch round cake pans. First grease and than flour the bottom and sides of the cake pans.

2. In a large bowl, measure all the ingredients except frosting, banana slices and lemon juice.

3. With mixer at low speed, beat until well mixed, constantly scraping bowl, then beat at high speed 5 minutes. accosionally scraping bowl.

4. Pour batter into pans and bake 25 minutes. or until toothpick inserted deep into the center of cake comes out clean.

5. Cool layer in pans on wire racks for 10 minutes, then remove from pans, and cool completely on racks before filling and frosting cake.

6. Prepare whipped cream frosting, then with metal spatula, fill and frost cake layers.

7. Just before serving, dip banan slices in lemon juice, use to garnish top of banana cake.

Directions for frosting

In small bowl with mixer at medium speed, beat cream with sugar and salt until stiff peaks form. Fold in vanilla extract keep frosted cake refrigirated until serving time.
