Chicken Gorgonzola

Ingredients

  • 2 pounds chicken strips (Tyson, Sam's refrigerated, or grilled breast strips)
  • 4 cups Gorgonzola sauce
  • 8 ounces sliced carmelized onions (1 cup)
  • 12 ounces frozen baby spinch (freeze a package of fresh spinach, not frozen spinach!)
  • 1 pound penne pasta (precooked, two minutes less than regular time, add 1-2 T of oil, toss and freeze to make ahead)

Preparation

Step 1

In a large skillet, heat the Gorgonzola sauce and onions on medium heat and stir until warm (about 10 minutes). Add frozen spinach and continue to cook for another 5 minutes until the spinach is wilted. Add the chicken and cook for about 5 minutes until it is warm. While the sauce is cooking, boil water in a separate pot and dip the precooked pasta into it. Strain the pasta immediately and add it to the skillet with the sauce and chicken and toss. Serve on a large serving platter.
