Ingredients
- Squash Soup
- 1 c. carrots, diced
- 1 c. celery, diced
- 2 Tbs. ginger root, minced
- 1 Tbs veg oil
- 6 c. butternut squash, peeled & cut into large cubes
- 6.5 c. water
- 1 tsp salt
- 1/2 tsp cinnamon
- 1/8 tsp nutmeg
- 2 Tbs soy sauce
- 1 Tbs maple syrup
- Pinch pepper
- 2 Tbs chives or parsley
Preparation
Step 1
In soup pan, saute' carrots, celery & ginger in oil over medium heat 10 min. Add squash & cook 5 more min. Add water, salt, cinnamon, nutmeg & soy sauce. Bring to boil & simmer 10 min. or until squash is tender. Remove from heat & stir in syrup & pepper. Cool to room temperature, then put in blender & puree' until smooth.
