Ingredients

  • 1

    onion

  • 1

    green pepper

  • 1/2

    cup celery (optional)

  • 2

    TB vegetable oil

  • 1

    cup rice

  • 3

    cups boiling water

  • 1

    large can whole tomatoes (cut up into large dice)

  • 1

    teaspoon salt

  • dash of saffron (optional)

Directions

Dice and sauté onion, pepper, and celery in a 2 quart pot. When vegetables are slightly browned, add rice and water. Cook over low flame for 20 minutes, Add tomatoes and salt (and saffron). Cook for 3-5 minutes more. More time may be needed. Taste to make sure rice is cooked.
