Best-Ever Apple Cake

This delicious cake has earned its designation as "Best-Ever." You may not be able to stop with just once slice.
Ingredients
- 3/4 cup(s) chopped pecans
- 3 cup(s) all-purpose flour
- 2 cup(s) sugar
- 2 teaspoon(s) ground cinnamon
- 4 large baking apples, peeled, cored, and sliced
- 1 tablespoon(s) baking powder
- 1 teaspoon(s) salt
- 4 large eggs
- 1/2 cup(s) vegetable oil
- 1/2 cup(s) (1 stick) unsalted butter, melted
- 1/4 cup(s) orange juice
- 2 teaspoon(s) vanilla extract
Preparation
Step 1
Heat oven to 350°F. Spray a 10-inch removable-bottom tube pan with nonstick spray. Sprinkle pecans evenly on bottom of pan.
In a large bowl, mix 2 tablespoons of the flour, 1/4 cup of the sugar, and cinnamon. Add apples and toss to combine.
In another large bowl, mix remaining flour, remaining sugar, baking powder, and salt. Add eggs, oil, butter, orange juice, and vanilla extract. Beat until batter is smooth.
Pour half of the batter (about 2 cups) into prepared pan. Top with half of apple mixture. Spoon remaining batter over apples and top with remaining apples, placing them 1/4 inch in from the tube and the border of the cake.
Bake 1 hour and 20 minutes, or until a toothpick inserted in the center of the cake comes out clean. Let cake cool in pan on a wire rack for 30 minutes.
Run a paring knife around the sides and center of cake and turn cake out onto wire rack. Invert cake onto another rack to cool, apple side up.

Used 9"x13" pan; subbed 1/2C applesauce for oil, and apple cider for orange juice. Coarsely chopped apples instead of slicing. Sprinkled top with 'raw' sugar before baking - gave nice shiny sparkly top. Done in 1 hour(slightly pulled away from sides). Got rave reviews from the crowd at the library!
Just made it and cake was delicious. I also substituted 1/2 cup of normal sugar for brown sugar. Perhaps due to my particular tube pan, I didn't spread in two coats of apples, but more like three. Cooking also took a bit longer, but best test is just to do a basic knife test. Remember it will stick a bit no matter what due to the sheer amount of apples though. Great cake though and very easy to make.
This recipe is fantastic. I made it for Thanksgiving, Christmas and multiple other times. Its delicious and people are always asking for the recipe. The only thing people seem to like more is the apple-cranberry pie that was on the same page in the magazine.
I just made this but made a few lighter tweaks....applesauce instead of oil, only three eggs and substituted 1/2 cup of brown sugar for the regular....OMG sooooo yummy!

I have been searching for a while for the best apple cake and finally I found it! THIS IS THE BEST EVER I have ever tasted,it is delicious. My husband says "Thank you Redbook." My 3 & 5 yr old children told me they love my apple cake. This recipe is a keeper. Thank you for sharing.
Tasted wonderful. The only thing is that it burned after one hour and I lost the pecans!

I used unrefined sugar and unrefined wheat, it's great, I got rave reviews from my co-workers.
