Green Bean and Cucumber Salad

Ingredients

  • 1 Pound green beans
  • 2 Tbsp grapeseed oil
  • 2 Tbsp tarragon vinegar
  • 1/4 Cup chicken broth
  • 1 Tbsp finely chopped parsley
  • 1/4 Tsp dried minced onion
  • 1/2 Tsp salt
  • 1/8 Tsp pepper
  • 1 Large cucumber

Preparation

Step 1

Cook beans until barely done. Put in a ice water bath. Mix remaining ingredients, except the cucumber, in a blender. Drain the beans. Toss dressing with the beans. Put in the refrigerator to chill. Add the cucumber before serving.
