Ingredients

  • 4 c stock
  • 1 c water
  • 9 oz package of cheese tortellini
  • 6 oz package of baby spinach
  • parmesan cheese
  • salt & pepper

Preparation

Step 1

Bring 4 c stock and 1 c water to a boil in a large saucepan. Reduce heat and add 9 oz package tortellini and simmer until pasta is tender. (about 6 min) Stir in a 6 oz package of baby spinach, cook until just wilted. Season with salt and pepper to taste. Ladle soup in 4 bowls sprinkle parmesan cheese over top.
