Ingredients
- 1 1# Pkg. (2-1/2 cups) Dried split peas
- 1 Quart cold water
- 1 Quart Low fat chicken broth
- 1 Ham Bone
- 1 Cup Diced Ham
- 1 Onion Diced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 Bay leaf
- 3 Stalks Celery - Diced
- 3 Carrots-sliced of diced
- 1 Potato - Diced

Preparation
Step 1
In large bowl, cover peas with 1 qt. cold water and soak overnight. If you need a faster method, simmer the peas gently for 2 min. and then soak for 1 hour.
Once peas are soaked put them & liquid in a large stock pot. Add 1 qt. chicken broth, ham bone, onion, salt, pepper & bay leaf. Cover, bring to boil and then simmer for 1-1/2 hours. stirring occasionally.
Remove bone; cut off meat, dice & return meat to soup. Add 1 cup chopped ham, celery, carrots and potatoes. Cook slowly, uncovered for 30-40 minutes, or until vegetables are tender. If soup becomes too thick thin with chicken broth.
