Golden Cauliflower

Even those who hate this healthy vegetable should give this one a try.

Ingredients

  • 1/2 to 3/4 head of cauliflower
  • Cooking spray
  • 1/2 cup olive oil
  • 1 cup Italian-style bread crumbs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic powder
  • dash of cayenne pepper (don't overdo it for this one!)

Preparation

Step 1

Remove tough leaves from the head of cauliflower and pull apart the florets, using a knife as needed. Place florets in a single layer in a microwave-safe baking dish. Add 1-2 Tablespoons of water, cover, and microwave for 5 minutes until tender.

Preheat oven to 400 degrees, and coat an 8-inch square baking pan with cooking spray.

Place oil in a small bowl. Mix bread crumbs, salt, pepper, garlic powder, and cayenne in a separate bowl.

Dip each floret first in the oil, then coat with the seasoned bread crumbs, and arrange in a single layer in the baking pan.

Bake for 30 to 35 minutes, until the florets look toasty brown.
