Ingredients

  • 4 cups flour
  • 2 cups sugar
  • 4 tsp baking powder
  • 1/4 tsp salt
  • 1 cup vegetable or olive oil
  • 3/4 cup orange juice
  • 4 eggs
  • 4 medium apples, peeled and thinly sliced (Gala)
  • 1/4 cup cinnamon sugar

Step 1

Preheat oven to 350 degrees. In mixing bowl, sift together flour, sugar, baking powder and salt. Add oil, orange juice and eggs and mix well on low speed. Pour half of batter in a greased and floured tube or fluted tube pan. Add a thin layer of apple. Go easy on the apple, as too much will prevent the cake from baking in the middle. Generously sprinkle the apple with cinnamon sugar. Try not to hit the sides of the pan with the sugar as this encourages sticking. Pour the rest of the batter on top of the apples. Arrange more slices of apple on top of the batter and generously cover them with cinnamon sugar. Bake at 350 for 1 1/2 hours or til a toothpick comes out clean. Let the cake cool completely before removing from the pan onto a serving plate.
