Ingredients
- 2 lbs. stewing beef
- 1 cup carrots, sliced 1/4-inch thick
- 1 cup celery chunks, bite-sized
- 1 yellow onion, slivered
- 2 cups mushrooms, sliced
- 2 tsp. garlic powder
- 1 tsp. salt
- Freshly ground black pepper
- 1/4 tsp. ground cloves
- 3 bay leaves
- 1 cup cider vinegar
- 1 1/2 cups beef broth
- 1/4 cup brown sugar
- 15 crushed gingersnap cookies

Step 1
In a crock-pot, place 2 lbs. stewing beef. Over raw meat, toss in the carrots, celery, mushrooms and onion.
Sprinkle on the garlic, salt, black pepper, and cloves. Lay 3 bay leaves on the top.
Pour cider vinegar and beef broth over top. Cover well and refrigerate overnight.
Remove from the fridge and cook for 7-10 hours on LOW setting.
About 30 minutes before serving, remove Crock Pot lid, remove the 3 bay leaves, and add the brown sugar and gingersnap crumbs.
Stir well, replace lid, and switch Crock Pot setting to WARM. Allow stew to heat 30 minutes or until thickened.
Serve over spaetzle or egg noodles.
