Ingredients
- 8 oz cream cheese, softened
- 1/3 cup thick and chunky salsa
- 2 eggs, lightly beaten
- 1/2 cup shredded cheddar cheese
- 2 TB chopped ripe olives
- 1 TB chopped green onion
- 1 garlic clove, pressed
- Optional: more salsa for topping
Preparation
Step 1
Preheat oven to 350.
In large bowl, beat cream cheese until smooth. Blend in salsa and eggs. Stir in cheese, olives, onion and garlic. Lightly spray mini-muffin cups with Pam; fill with cream cheese mixture.
Bake 15-18 minutes or until centers are set. Remove from oven and cool in pan 5 minutes. Remove from pan and cool on wire rack. Top with salsa, if desired.
