  • 6 whole Eggs
  • 4 Tablespoons Milk
  • 2 whole Plum Tomatoes, Chopped
  • 10 leaves Basil, Chopped
  • 1/4 cups Goat Cheese Crumbled
  • 1 pinch Salt And Pepper, to taste
  • 2 slices Parma Ham, Sliced Into 6 Pieces

Preheat oven to 180ºC/350ºF. Crack eggs into a large bowl, preferably with a spout. Whisk in milk. Add tomatoes, basil, goat cheese and salt and pepper. Divide evenly between the wells of a 6-cup muffin pan. If you are using a silicone pan, there is no need to grease it but I would grease a metal pan just in case. Top each “muffin” with a couple slices of ham. Bake for 20-25 minutes until firm. They can be served cold or heated for 25 seconds. Store in an airtight container and enjoy each morning for a quick, healthy start.
