CRAB STUFFED BAKED SALMON

Ingredients
- STUFFING:
- 1/3 cup minced onion
- 7 1/2 oz fresh crab meat, flaked
- 1/4 cup parsley chopped
- 1/4 cup whipping cream
- 1/4 tsp thyme
- 3 tbsp butter
- 1/2 cup fresh bread crumbs
- BAKED SALMON:
- 4-5 Ib whole salmon
- 1/3 cup butter melted
- 1/3 cup dry white wine (or 2 tbsp lemon juice plus water to make 1/3 cup)
- Salt and pepper

Step 1
Mince onion. Saute in butter until golden. Add remaining ingredients and heat thoroughly.
Rinse salmon thoroughly in cold water. Sprinkle cavity with salt and pepper. Stuff cavity lightly and skewer edges together. Place stuffed salmon on shallow baking dish Bake uncovered at 400 degrees Farenheit for 30 to 45 minutes ( 10 minutes per inch thickness measured at the thickest point). Baste frequently with butter and wine marinade. Salmon is done when flesh flakes easily and liquid becomes milky white.
