Ingredients

  • Bread Crumbs:
  • 4 slices white bread
  • 2 tblsps unsalted butter
  • 1/4 tsp salt & pepper
  • minced shallot
  • 2 tblp minced parsley
  • Dip:
  • 2 eggs
  • 3 tblp mayo
  • 2 tsp horse raddish
  • 1/2 tsp paprika
  • 1/4 tsp cayene pepper
  • 1/4 pepper black
  • 5 tblp flour
  • Tarter Sauce:
  • 3/4 cup mayo
  • 2 tblp capers
  • 2 tblp relish
  • 1/2 tsp worchestershire sauce
  • 1 1/2 tsp white vinegar
  • 1/2 tsp pepper
  • minced shallot
  • 4 pieces of Fish

Preparation

Step 1

Bread Crumbs:

Place bread in blender with butter and salt & Pepper and Pulse 8 time for course crumbs. Spread crumbs on a cookie sheet and bake in a 350o oven for 15 mins. Cool 10 mins. Put crumbs in a pie plate and mis with minced shallot and 2 tblp of minced parsley. Toss well. Set aside.

Increase oven to 450o

Dip:

Put all ingredients in a bowl and mix well. Pour into a pie plate.

Put 1/4 to 1/2 cup of flour in a pie plate.

Pat fish dry with paper towels.
Dip in flour and pat to remove excess.
Dip in batter, and make sure all the surfaces are covered. Dip in the crumbs and pat them on so they stick well. Place the fish on racks that have been placed on the cookies sheets and bake in 450o oven for 23-25 mins. or until they register 140o.

Make the tarter sauce or use your own.
