- 2 pieces salted Cod fish
- 1 tbsp parsley, minced
- 2 egg whites (BEATEN STIFF) 2 egg yolks
- 1 pinch garlic and pepper
- 2 medium potatoes
Soak Cod fish in water overnight. Boil potatoes with fish, cook and drain. Cool. Mash potatoes and shred fish in small pieces with your fingers. Mix in parsley, garlic, pepper, yolks and finally the egg whites. Heat oil in a deep frying pan. Fry croquettes, shaping them with two tablespoons, switching the batter from one spoon to the other a few times. Fry over low heat until golden brown. Makes 18 to 20 croquettes.
