Pecan Chicken Strips

  • Chop 1/4 cup pecans until they are the size of bread crumbs. Set aside 2 Tblsp. Combine remaining pecans with 1/4 cups Panko breadcrumbs and 1/ tsp pepper. Place in flat-bottomed bowl.
  • Pour 2 Tbs. maple syrup into a dish. Dip chicken strips in syrup and then into nut mixture.

Place coated chicken strips in baking dish heavily sprayed with Pam and bake 30 minutes at 350 degrees.

With about 10 minutes cooking time left, pour 2 tbs. syrip, juice from 1/2 lemon and 12 cup orange juice into a saucepan. Bring mixture to a simmer and cook until reduced by half. Before serving add reserved pecans and 1 tsp. parsley. When ready to serve, pour sauce over chick or serve on the side.
