Ingredients

  • 3/4 cup cooking oil
  • 1 cup white sugar
  • 2 eggs
  • 1/2 teaspoon salt
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon cinammon
  • 1 sash each of ginger, cloves, and mutmeg
  • 1/2 cup raisins
  • 1/2 cup walnuts (optional)
  • 1 1/2 cup carrots (finely grated) (you can use zuccihini in place of carrots also)

Cooking time 55mins

Preparation

Step 1

Mix oil and sugar. Add eggs and beat. Stir in dry ingredients. Add raisins and grated carrots or zucchini.

Bake in a 8 inch sqaure pan at 350F about 55 minutes. Cool. Eat plain or add your favorite icing.
