Carrot Cake

Ingredients
- 3/4 cup cooking oil
- 1 cup white sugar
- 2 eggs
- 1/2 teaspoon salt
- 1 cup flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon cinammon
- 1 sash each of ginger, cloves, and mutmeg
- 1/2 cup raisins
- 1/2 cup walnuts (optional)
- 1 1/2 cup carrots (finely grated) (you can use zuccihini in place of carrots also)

Preparation
Step 1
Mix oil and sugar. Add eggs and beat. Stir in dry ingredients. Add raisins and grated carrots or zucchini.
Bake in a 8 inch sqaure pan at 350F about 55 minutes. Cool. Eat plain or add your favorite icing.
