Chicken Noodle Casserole

Ingredients

  • ALTERNATIVE RECIPE:
  • 1 can cream of chicken soup
  • 1/2 cup mayo
  • 2 tablespoons lemon juice
  • 2 cups cubed cooked chicken
  • 1 small onion, chopped
  • 1/4 cup chopped green pepper
  • 1/4 cup chopped sweet red pepper
  • 1 cup shredded Monterey Jack cheese, divided
  • 1 cup shredded sharp cheddar cheese, divided
  • 12 oz. medium egg noodles, cooked and drained
  • 1 lb. cooked, boneless, skinless chicken breast halves, cubed
  • 3 celery stalks, chopped
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 cups cooked fine egg noodles
  • 1/4 cup mayo
  • 1 can cream of chicken soup
  • 1 cup crushed potato chips

Preparation

Step 1

In a large bowl, combine soup, mayo and lemon juice. Add the chicken, onion, peppers, 1/2 cup Monterey Jack and 1/2 cup cheddar cheese; mix well. Add noodles and toss to coat.

Transfer to a greased 2-quart baking dish. Bake, uncovered, at 350 degrees for 30 to 35 minutes. Sprinkle with remaining cheeses. Bake 10 minutes longer or until vegetables are tender and cheese is melted.

ALTERNATIVE RECIPE:
Combine all ingredients except potato chips; mix well. Spoon into prepared casserole and top with potato chips. Bake 30 minutes, or until golden. Serves 5
