  • 1 fifteen ounce can of yellow hominy
  • 1 fifteen ounce can of black eyed peas
  • 1 green bell pepper
  • 1 large tomato
  • 1 medium purple onion
  • 2 stalks of celery
  • 1/4 cup oil
  • 1/4 cup white vinegar
  • Salt and pepper

Drain the water from the two cans, and dump the hominy and black-eyed peas into a large mixing bowl.

Chop the bell pepper, onion, celery, and tomato. You can chop as coarsely or as fine as you like. The recipe originally called for pieces that were finely chopped, but a coarse chop makes for a more attractive presentation. Place all the chopped vegetables into the mixing bowl with the hominy and black-eyed peas.
Step 3
Add salt and pepper to taste. Toss the ingredients lightly to evenly distribute the seasonings.
Step 4
Prepare the dressing by combining the white vinegar and oil. Pour the dressing over the ingredients and toss one last time before placing the salad into a serving dish. Depression salad can be served at room temperature or chilled, whichever you prefer.
Tips and Warnings
For some extra zing, add other seasonings and spices, like dill weed or garlic to the mix.
The original recipe calls for using plain old vegetable oil and white vinegar. However, feel free to experiment. Olive or peanut oil works well with this recipe, as does apple cider or red wine vinegar.
