Southwest Spicy Bacon Cornbread Stuffing

Ingredients

  • 6 Tbs butter
  • 8 oz. bacon, diced
  • 1 c. diced onion
  • 2 c. diced celery
  • Sage & Thyme seasoning to taste
  • S&P
  • 3 c. chopped chicken or turkey
  • 2 eggs
  • 1/4 c. chopped fresh parsley
  • 6 c. cubed stale cornbread
  • 8 c. stale white bread
  • 1 jalapeno pepper, sliced
  • 2 c. shredded pepper-jack cheese

Preparation

Step 1

Cook bacon in butter, then add onion, celery, jalapeno & seasonings; cook 5 min. Add poultry & bring to simmer. Beat eggs with parsley in large bowl; add both breads, then pour in the vegetable-broth mixture & toss. Transfer to buttered baking dish & dot with butter. Cover & bake @ 375 degrees 30 minutes; uncover & bake until golden, about 30 minutes.
