Ingredients

  • 1

    celery stalk (minced)

  • 1/2

    onion (minced)

  • 1/2

    tsp. salt

  • 1/2

    tsp. ginger (ground)

  • 1

    lb. ground turkey

  • 2

    tsp. horseradish

  • chopped parsley

  • 1/3

    c orange juice

  • 1

    T teriyaki sauce

  • 1/2

    tsp. flour

Directions

In skillet and 2 T oil cook celery, onion, salt and ginger until tender. In bowl, mix turkey, vegetable mixture, horseradish and 1 T parsley until blended. Shape turkey into medallions and cook in skillet with 1 T oil, until golden brown on both sides. Remove and keep warm. In small bowl, mix orange juice, teriyaki sauce , flour and 1 T parsley with 1/3 c water until smooth. Stir into skillet. Heat to boiling and boil 1 minute. Pour sauce over turkey medallions.
