Ingredients

  • 10 EGGS
  • 1/2 CUP FLOUR
  • 1/4 CUP MELTED BUTTER
  • 1/4 tsp SALT
  • 1 tsp BAKING POWDER
  • 1 POUND SAUSAGE ( WE USED JIMMY DEAN)
  • 1 POUND LARGE COTTAGE CHEESE
  • 1 POUND CHEDDAR CHEESE—half for mixture and half for topping

Preparation

Step 1


Brown sausage to remove any grease. . Crumble into bite size pieces. Set aside
Combine flour in melted butter. Add salt and baking pwdr. Wisk eggs. Add eggs to flour/ butter mixture, add cottage cheese and ½ cheddar cheese. Mix together with hand mixer to make fluffy. Add cooked sausage and stir. Pour mixture into 9x12 baking dish lightly sprayed with Pam. (NOTE: I didn’t have another 9x12 pan so I used a casserole dish which required longer cooking)
Top with remaining cheddar cheese and bake about 1 hour at 350.
