Ingredients

  • 1/2 Ib pork tenderloin
  • 1/3 cup fresh orange juke
  • 1 tbsp grated fresh ginger root
  • 1 garlic clove, crushed
  • 1 cup onion wedges
  • 2 tbsp water
  • Celery, cut diagonal
  • 2 tbsp light soy sauce
  • 1/2 tsp orange rind (grated)
  • 1 tbsp cornstarch
  • 1 tbsp vegetable oil
  • 1 cup diagonal sliced carrots
  • 1 cup pea pods
  • Hot cooked rice

Preparation

Step 1

Slice pork into thin slices. Combine orange juice and rind, soy sauce, ginger, corns tarch and garlic. Mix well. Pour over meat and let marinate for 30 minutes. Heat oil in wok or frying pan. Drain meat, reserving marinate Stir-fry meat in hot oil until cooked. Remove from wok and set aside. Add onion, carets and water to wok, cover and let steam for 2 minutes or until tender crisp. Add celery and pea pods and stir-fry until tender crisp, about 1 minute. Add meat and reserved marinate to the vegetables and cook stirring constantly until mixture thickens slightly. Spoon pork mixture over rice. Makes 4 servings.
