Mexican Stuffed Shells

Ingredients

  • Toppings:
  • 1 lb lean ground beef
  • 1 pkg taco seasoning
  • 8 oz pkg cream cheese
  • 16 jumbo shells
  • 1-1/2 cups salsa
  • 1 cup taco sauce
  • 1 cup cheddar cheese
  • 1 cup Monterey jack cheese
  • Green onions - chopped
  • olives - chopped
  • sour cream

Preparation

Step 1

Preheat oven to 350 degrees

Brown ground beef. Add taco seasoning, prepare as directed on package.
Add cream cheese, cover and simmer until cheese is melted, stir and set aside to cool completely.

Cook pasta shells about 8 minutes, drain, separate shells individually on cookie sheet so they don't stick together.

Pour salsa on bottom of a 9x13 baking dish.

Stuff each shell with 1-2 Tbsp of beef mixture, then evenly cover shells with taco sauce, cover shells with foil and bake 30 minutes.

Add shredded cheeses and bake again for 10-15 minutes uncovered.

Add toppings if desired.

You can add the toppings on with the cheese and bake it. Try it and see what you like best.
