Ingredients
- 4 large baking potatoes (10 to 12 oz each)
- 4 oz thinly sliced extra lean cooked ham, chopped
- 1 cup chopped onions
- 1 1/2 cups Green Gian Frozen Cut Green Beans, thawed
- 1 8oz can Green Giant Mushroom Pieces and Stems, drained
- 1/2 cup ready to serve fat free chicken broth with 1/3 less sodium
- 1/2 tsp dried thyme leaves
- 2 oz (1/2 cup) shredded reduced fat sharp cheddar cheese
Preparation
Step 1
Pierce potatoes with fork; place on microwave safe paper towel or roasting rack in microwave. Microwave on high for 12 to 15 minutes or until tender; turning once halfway thru cooking.
Meanwhile, spray large nonstick skillet with nonstick cooking spray. Heat over high heat until hot. Add ham and onions. Reduce heat to medium; cover and cook 2 minutes or until onions are tender, stirring once.
Add green beans, mushrooms, broth and thyme, cover and cook over medium heat for 5 to 7 minutes or until green beans are tender.
To serve, split each potato in half lengthwise; fluff with fork. Spoon ham and vegetable mixture over potatoes; sprinkle with cheese.
TIP: To quickly thaw frozen green beans,place in colander or strainer; rinse with warm water until thawed. Drain well.
