These make a full 3 dozen cupcakes, so good to bring to school (I used to make them for Beth & Heather). The inside has cream cheese filling, with mini chips. Although I usually just dust them with powdered sugar, you could always lightly frost with chocolate frosting and a squiggle of white (for your own, homemade Hostess Cupcakes ~ from scratch)

Ingredients

  • Filling:
  • 3 cups flour
  • 2 cups sugar
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup oil
  • 2 tsp pure vanilla extract
  • 2 cups water
  • 2 TB plain vinegar
  • powdered sugar
  • 1 8-oz pkg cream cheese, softened
  • 1 egg
  • 1/2 cup sugar
  • 1/4 tsp salt
  • 1 6-oz. pkg chocolate chips (I like mini morsels)

Preparation

Step 1

Whisk flour, sugar, cocoa, soda and salt together. Add remaining batter ingredients and WHISK together until well blended (stir, don’t beat). Combine filling ingredients together, until well blended, in another bowl. Fill 36 cupcake papers half-full of cake mixture. Add a large teaspoonful of filling and fill remainder of cupcake with chocolate batter. Bake at 350 for 25-30 minutes. If desired, sprinkle with powdered sugar. Makes 3 dozen …. These freeze well
