English Butter Toffee

Easy CANDY to make ~ tastes somewhat like "honeycomb" chocolates. No candy thermometer needed ~ use your MICROWAVE. Great gift too!

Ingredients

  • 1-1/3 cup water
  • 1 cup real butter, softened
  • 2 TB sugar
  • 1 TB dark corn syrup
  • 1 tsp vanilla
  • 3/4 cups semisweet chocolate chips
  • 2/3 cups chopped nuts (walnuts, almonds, pecans)

Preparation

Step 1

In a large microwave-safe bowl, mix sugar, butter, water and corn syrup. Microwave on high for 4 minutes, stirring every 2 minutes. Heat 6-8 minutes longer until thickened and gold in color. Stir in vanilla; stir well. Pour mixture into sprayed 9x13” pan (could also line with well-sprayed foil ~ extend foil over edges, so you can lift it out later). Spread chocolate chips over hot toffee; sprinkle with nuts. Cool completely. Break into pieces.
