ITALIAN SAUSAGE AND PASTA CASSEROLE

Ingredients

  • 2 cups of pasta 1 can 28oz chopped tomatoes
  • 1 lb. hot Italian sausage 1 small can tomato sauce
  • 1 large onion chopped 1/2 tsp. each thyme, oregano, basil
  • 2 cloves of garlic minced 1/2 cup chopped parsley
  • 1 red pepper, chopped

Step 1

Cook Pasta, drain and rinse. Cut sausage into ½ “, cook over medium heat until brown. Transfer to 12 cup casserole add onion, garlic, red pepper to skillet
Cook for about 5 minutes, or until softened. Transfer to casserole; add tomatoes, tomato sauce, and herbs (not parsley) to skillet bring to boil, breaking up tomatoes with spoon and scrap up brown bits from bottom of pan.

Add pasta and half the parsley, mix thoroughly. (Recipe can be kept in fridge 2 days covered). Sprinkle with remaining parsley and pepper
Bake in 350f oven for 30-40 minutes.
