Refrigerator Bran Muffins

Ingredients

  • 1 cup boiling water
  • 1 cup bran cereal (not flakes)
  • 1/2 c oil (or unsweetened applesauce)
  • 2 1/2 c flour
  • 2 1/2 teas baking soda
  • 1 teas salt
  • 1 teas cinnamon (desired)
  • 2 large eggs (or 1/2 c egg substitute)
  • 2 c buttermilk
  • 1 1/2 c sugar
  • 2 c all bran cereal
  • 1 c raisins (optional)

Preparation

Pour boiling water over cup cereal. When it's cooled, add oil.
Blend flour, soda and salt in mixing bowl. Stir in raisins.
In another bowl, mix begss, beat until light. Add buttermilk and sugar. Add this to dry ingredients. Stir in remainder of cereal and then water/bran/oil mixture.
Place in airtight container in refrigerator.
Take out desired amount and put into muffin tin. Bake 20-25 minutes.
Will keep 1 month.
