Turkey Sandwich with Red Pepper-Pine Nut Pesto and Caramelized Onions

Ingredients

  • 1/4 cup chopped fresh basil
  • 2 tbsp grated fresh Parmesan cheese
  • 1 tbsp pine nuts, toasted
  • 1 tbsp water
  • 2 garlic cloves, halved
  • 1 7oz bottle roasted red peppers, drained
  • 2 tsp olive oil
  • 2 cups vertically sliced onions
  • 2 tsp sugar
  • 8 oz loaf of good bread
  • 12 oz sliced cooked turkey breast
  • 2 oz (or more) fontina cheese

Preparation

Step 1

Place first 6 ingredients in a food processor and process until smooth.
Heat oil in a large nonstick skillet over medium-high heat. Add onion and sugar, cooking for about 8 min or until onion is browned, stirring occasionally.
Slice bread and spread pepper mixture over half of slices. Layer on turkey, cheese, and onion and top with remaining bread slices.
