Rose's Squash Casserole

  • 2 pounds squash, zucchini
  • 1/4 cup chopped onion
  • 1 cup sour cream
  • 1 cup cream of chicken soup
  • 1 cup shredded carrots
  • salt and pepper, to taste
  • 1/4 cup melted butter
  • 8 ounces pepperidge farm stuffing



Step 1

Boil sliced squash and onions for 5 minutes, drain and add the rest of the ingredients, except for melted butter and stuffing. combine melted butter and stuffing in a separate bowl. In a 2 quart casserole place 1/2 stuffing mix, layer of squash mixture, top w/ stuffing mix.
