Chicken Enchilada Casserole

Ingredients

  • 1 med chicken, cooked, skinned &
  • chopped
  • 1 lge can diced green Ortega chilies
  • 1 can sliced black olives
  • 2 cans cream of chicken soup
  • 1 lb jack cheese, grated
  • 1 lb grated cheddar cheese
  • 1/2 c chopped onion, cooked until soft
  • 1/2 c salsa
  • 1 pkg tortillas, torn in pieces

Preparation

Step 1

Mix soup, chilies, olives, salsa & onion. Mix in chunks of chicken. Layer in this order in greased casserole:
tortillas
sauce
cheese
Continue to layer until ingredients are used up. Bake 1 1/2 hour.
Freezes well.
