Grandmother's Carrot Cake

Ingredients

  • Icing:
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp. soda
  • 1 tsp. salt
  • 4 tsp. cinnamon
  • 4 eggs
  • 2 tsp. vanilla
  • 1 cup pecans
  • 3 cups shredded raw carrots
  • 1 1/2 cup vegetable oil
  • 1/2 cup butter
  • 6 oz. cream cheese
  • 1 pkg. powered sugar
  • 1/2 c. pecans
  • 1 cup coconut (opt)
  • 2 tsp. vanilla

Preparation

Step 1

Sift together and set aside: flour, sugar, soda, salt, and cinnamon.
Mix: eggs, vanilla, oil, pecans and carrots

Combine all ingredients and mix well. Bake in greased and floured 13 X 9 in. pan at 375 degrees for 45 minutes to 1 hour. Cool completely.

Cream together the butter and cream cheese. Mix in remaining ingredients and frost cooled cake.
