Ingredients
- 2 c salsa
- 4 c shredded chicken or turkey
- 2 c cooked sweet potato
- 2 cans (4oz) diced chiles
- 12 tortillas (corn)
- 1 c crushed pineapple
- 1-2 c jack/cheddar/pepper jack
- 1 t salt
- 1/8 t pepper
- 2 t cumin
- optional red pepper flakes or cilantro

Preparation
Step 1
Mix meat, spices, 1 can chilies, & 1/2 c salsa. Grease dish and add 1/2 c salsa & warm tortilla. Add filling and roll seam side down. Pour salsa, pineapple, 1 can dchiles and cheese on top. Add optional ingredients to garnish. Bake 350 for 30 min.
