Enchiladas

Ingredients

  • 2 c salsa
  • 4 c shredded chicken or turkey
  • 2 c cooked sweet potato
  • 2 cans (4oz) diced chiles
  • 12 tortillas (corn)
  • 1 c crushed pineapple
  • 1-2 c jack/cheddar/pepper jack
  • 1 t salt
  • 1/8 t pepper
  • 2 t cumin
  • optional red pepper flakes or cilantro

Preparation

Step 1

Mix meat, spices, 1 can chilies, & 1/2 c salsa. Grease dish and add 1/2 c salsa & warm tortilla. Add filling and roll seam side down. Pour salsa, pineapple, 1 can dchiles and cheese on top. Add optional ingredients to garnish. Bake 350 for 30 min.
