Scallop Salad

Ingredients

  • olive oil
  • lemon juice
  • s & p
  • watercress
  • endive
  • 3 hard boiled eggs
  • sea scallops - 3-4 per person

Preparation

Step 1

Dry scallops and toss with olive oil to lightly coat. S & P.

Heat skillet and add scallops without crowding. Brown each side, remove to a plate and add second batch if needed.

Quarter hard boiled eggs and add to watercress / endive greens. Dress with 1:3 lemon juice to olive oil, s & p.

Plate salad and 3-4 scallops per serving.
