Peppermint Cookies

  • 1 1/4 cup crushed peppermints
  • 1 1/3 cup sugar divided
  • 3/4 cup butter
  • 2 eggs
  • 1 tsp peppermint extract
  • 3/4 tsp vanilla
  • 2 1/2 cup AP flour
  • 1/4 tsp salt

Preparation

Step 1

Preheat oven to 350 degrees.
Put candy and 1/3 cup sugar in a food processor and grind until powdery with a few larger chunks.
Mix flour and salt in a small bowl.
In a larger bowl mix butter, eggs, and 1 cup sugar together. Add vanilla and peppermint extract. Add the flour mixture to the bowl in 3 parts and stir to combine.
Form dough into small balls. Roll the balls in the crushed candy and sugar and place on an ungreased cookie sheet. Bake 8 min at 350 degrees.
Let cool for 1 min on the baking sheet and roll in candy mixture once more before cooling on waxed paper.
