Sweet and Salty Peanut Chocolate Chunk Cookies

Be sure to use coarse grained sea salt in this. The grain don't melt into the batter and give you a crunchy, salty burst.

Ingredients

  • 1/3 cup coarsley chopped unsalted, dry roasted peanuts
  • 1 cup AP flour
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 cup sugar
  • 1/2 cup packed brown sugar
  • 1/4 cup unsalted butter, softened
  • 1 tsp vanilla extract
  • 1 large egg
  • 1/3 cup semi-sweet chocolate chips
  • 1/2 tsp coarse sea salt

Preparation

Step 1

Preheat oven to 350 degrees.
Place the nuts in a small baking pan. Bake at 350 for 8 min or until lightly toasted. Cool.
Combine flour, baking powder, and baking soda, stirring well with a whisk.
Place sugars and butter in a large bowl. Beat with mixer until well blended.(about 2 min) Add vanilla and egg, beat until combined. Add the flour mixture to the sugar mixture and beat until well blended. Stir in the peanuts, chocolate chips, and salt.
Drop dough by spoonfuls onto a baking sheet coated with cooking spray. Bake at 350 for 10 min or until edges are lightly browned. Cool on pan for 5 min then move to racks to cool completely.
