French Style Shrimp Salad

Ingredients

  • Vinaigrette:
  • 6 garlic cloves, halved
  • 2/3 C chicken broth
  • 1/4 C chopped basil
  • 1/4 C chopped parsley
  • 2 T lemon juice
  • 2 T tarragon vinegar
  • 2 T olive oil
  • 2 t Dijon mustard
  • 1/2 t black pepper
  • Salad:
  • 2 lbs large shrimp
  • 12 small red potatoes, @ 3/4 lb.
  • 1/2 lb haricots verts
  • Cooking spray
  • 5 C gourmet salad greens
  • 4 C torn romaine
  • 1 C sliced red pepper
  • 3 med. tomatoes cut into wedges
  • 1 Can quatered artichoke hearts
  • 3 hard cooked eggs, sliced in quarters
  • 1/2 C nicoise olives
  • 2 T capers

Preparation

Step 1

Prepare vinaigrette by processing garlic til minced. Add broth & next 7 ingredients; process til belended
To prepare salad: combine 2 T vinaigrette & shrimp in large bag; seal & marinate 20 min.
Place potatoes in large saucepan, cover with water. Bring to boil, cook 8 min. Add haricots verts to pan & cook 2 more min. Drain & rinse with cold water. Cut potatoes into 1/4" slices. Set aside.
Heat large grill over med-hi heat. coat with cooking spray. Grill shrimp 3 min.
Combine potatoes, haricots verts, greens. lettuce, bill pepper, tomatoes, & artichokes in large bowl. Add remaining vinaigrette, tossing gently to coat. Place lettuc mixture on serving platter. Arrange shrimp & eggs over top; sprinkle with olives & capers.
