Chicken N' Corn Casserole

Ingredients

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups half and half
  • 1 pkg (16oz) frozen corn
  • 1 tbsp sugar
  • 1/2 tsp salt
  • 2 eggs, beaten
  • 4 chicken breasts
  • 1/4 butter, melted
  • 1 cup crumb style stuffing mix

Preparation

Step 1

Preheat oven to 350. Spray 13x9 pan. Melt 2 tbsp butter in saucepan. Stir in flour. Cook, stirring constantly, 1 minute. Stir in half and half. Continue cooking, stirring constantly until thickened, 1-2 minutes longer.

Stir in corn, sugar and salt. Remove from heat and cool. Add eggs stirring until until well mixed. Pour into pan.

Dip each chicken into melted butter. Coat generously with stuffing mix. Place chicken ontop of corn. Sprinkle any remaining stuffing on top.

Bake 35-400 minutes.
