Southwestern Chicken Skillet

Ingredients

  • 1 lb. chicken breast cut into bite sized pieces
  • 2 c elbow macaroni (uncooked)
  • 1/2 lb. Velveeta cheese
  • 1 can Rotel tomatoes with green chilies (undrained)
  • 1/2 c sour cream
  • 2 T parsley (optional)

Preparation

Step 1

Cook chicken in skillet until cooked through. Stir in 2 c water and bring to a boil. Stir in macaroni and cover. reduce heat to medium. Simmer 15 minutes until water is almost absorbed. Add Velveeta and tomatoes. Cook until cheese is melted. Remove from heat and stir in sour cream. Sprinkle with parsley.
