Ingredients
- 2 cups packed kale leaves
- 1/2 cup shelled pistachios
- 2 Tbsp grated Parmesan cheese (or a "Mock" Parmesan)
- 1 tsp minced garlic
- juice from half a lemon
- 1/2 tsp kosher salt
- 1/4 cup olive oil
- 1/2 cup water from cooked pasta
Preparation
Step 1
Place all ingredients except for pasta water in a food processor or blender. Mix until smooth.
Combine with cooked pasta and pasta water.
