Oven-Baked Western Omelet

Ingredients

  • 3 green onions
  • 1 red pepper
  • salad oil
  • 6 eggs
  • 1 c shredded Swiss cheese
  • 1/4 tsp. salt
  • 1 6 oz. package Canadian bacon

Preparation

Step 1

Preheat oven to 375 degrees. Slice green onions and red pepper into slices. In skillet with oven-safe handle, heat 2 T oil and cook onions and pepper. In bowl, mix eggs, cheese, salt and 1/3 c water. Pour egg mixture over onions and pepper in skillet. Bake 15-20 minutes or until set. In another skillet, heat 1 T oil and cook Canadian bacon until lightly brown. Top omelet with bacon and serve.
